This sweet yeast bread filled with fruit or cheese was brought to the U.S. with Czech immigrants, in the mid-1800s. A "kolache", for those who have never been blessed with a sampling of the pastry, is a type of pastry that holds a dollop of fruit rimmed by a puffy pillow of supple dough. This step-by-step guide, complete with pictures and online videos, will allow even the most timid baker the opportunity to make this old world classic easily and perfect every time. This is an excellent book in its own right. It is well written and covers its subject matter very well. It is made all the better being in the lay it flat format. It can be positioned at a certain page to reference and never flips pages or tries to close. And it can be read in single page format by holding it in that manner. An excellent book made better. This is a sturdy, easy to follow instruction book that really lays flat, even when you fold the pages completely over.
I wish there were a little more margin between the spine and the words, but it is readable so that is a small thing.
